1 sweet potato, grated
1 yellow onion, chopped
2 tablespoons extra virgin olive oil
1 tablespoon black peppercorn, ground
WARNING! When choosing sweet potatoes, look for ones that don’t have soft spots, which can indicate bacteria growth and a general decay of the potato. Also, for other sweet potato recipes – try to find ones that are uniform in shape so they’ll cook evenly.
This dishy sweet potato meal is rich in vitamin A, and truly a paleo diet favorite.
Use a cheese grater or food processor (easier and recommended) to alter a single large sweet potato or a few small sweet potatoes into shreds and sauté them over medium-high heat with a chopped or diced onion in two tablespoons of olive oil until everything begins to brown and becomes crispy.
Even better, slow cook over low to medium heat while stirring frequently to create a mash version that rivals the tastiest sweet potato pie!
Season with a bit of ground black pepper corn, and any other spices you deem fit. Butter is not Paleolithic, so it’s not needed! If the potatoes begin to stick to the pan, simply add more olive oil.
Make sure to use only extra virgin cold pressed olive oil, which is the paleo friendliest of cooking oils.
