2 pounds ground grass-fed beef

1/2 yellow onion, finely chopped

1 cup sliced shiitake mushrooms
1 tablespoon extra virgin olive oil
1 teaspoon garlic powder

Shiitake mushrooms help boost our bodies immune system, as they are rich in B vitamins. They are an excellent of pantothenic acid. A good source of niacin, choline, and folate.
Medicinal use of shiitake mushrooms dates at least to 100 AD in China. Still today they are an important part of a balanced diet, and they are delicious. The hearty flavors found in this dish make it great for left-overs!
Preheat your oven to 350 degrees.
Heat olive oil in a stainless steel skillet over medium heat. Add the sliced mushrooms and cook for 5 minutes, stirring occasionally. Add diced tomatoes and cook for another 5 minutes, stirring occasionally.
Remove from heat and cool for 5 minutes. Blend in a food processor.
Mix the mushroom mixture in a large bowl with the egg, onion, and garlic powder. Add the ground beef and mix thoroughly. Place mixture in a loaf pan.
Bake for 1 hour and 15 minutes. Remove from the oven and cool for 5 minutes.
