2 tablespoons coconut oil
1 small yellow onion, chopped
1 pound black Angus beef steak
1 garlic clove, crushed in a garlic press
3 carrots, peeled and sliced
4 celery stalks, sliced into 1 inch pieces
2 cups of water or chicken broth
1 bay leaf
1 sprig of fresh rosemary
1 teaspoon dried oregano
1 teaspoon ground black pepper
WARNING! When you get to the step where you add the onion and garlic to the skillet – your entire kitchen will smell like a five star restaurant! If the ingredients are sticking to the pan, or cooking to fast while your prepping for the next step – simply turn down the heat or add more coconut oil.
Serving size is for 2 – if cooking for 1, this is a meal that will last for a few days in the fridge. For a family of 4 or more, simply double the ingredients.
The bay leaf is so important, it gives the meal that hearty beef stew aroma you would expect from a dish prepared by a master!
This hearty beef and vegetable stew meal is rich in protein and iron which benefited our paleolithic ancestors with optimal health throughout the ages.
Heat 1 tablespoon of coconut oil in a stainless steel skillet over medium heat. Add beef to skillet and brown evenly on all sides, for about 10 minutes. Remove from skillet and set aside.
Add another 1 tablespoon of coconut oil, onion, and garlic to skillet. Saute over medium high heat for five minutes, then toss in the carrots, celery, and saute for another five minutes, stirring frequently.
Remove from skillet and place mixture into stainless steel boiling pot with beef, pour in cup of water or chicken broth. Bring to a boil, then cover and reduce heat to low, stirring every 10 minutes or so.
Use a spice bag to add bay leaf, rosemary, and oregano. Cover and simmer for 30 minutes. Add black pepper to taste. Enjoy 😉
